I always imagined Thousand Island Dressing to be seventies thing.  But who would have thought that in 1916 Ralph would offer us his recipe in, ” Celebrated Actor Folks’ Cookeries: A Collection of the Favorite Foods of Famous Players”.  I’ve never made Thousand Island Dressing before but excuse my swearing, this was bloody delicious.  I have a whole jam jar of it left over from Lucille’s Sunday Night Supper and have been eating it on toast it is so good.

I like Ralph’s philosophy on salad dressing:

To make a perfect salad, there should be a “miser for vinegar, a spend thrift for oil, a wise man for salt and a madcap to mix them all together,” is still a good rule to remember.”

Ralph Herz’s Thousand Island Salad Dressing

1 cup mayonnaise

½ cup olive oil

yolk 1 hard boiled egg

2 teaspoons Tarragon vinegar

1 tablespoon chopped olives

1 tablespoon mashed pimentos

2 tablespoons chopped green peppers

½ cup chilli sauce

1 tablespoon onion juice

put the cooked egg yolk through a sieve, add to it gradually the olive oil and vinegar, stir until smooth, add mayonnaise, onion juice, olives, peppers, pimentos and last the chilli sauce.

Serve ice cold with white head lettuce and crisp crackers.
